We start with what is Remembrance Day

Every year on November 11, Canadians pause in a moment of silence to honour and remember the men and women who have served, and continue to serve Canada during times of war, conflict and peace. We remember the more than 2,300,000 Canadians who have served throughout our nation’s history and the more than 118,000 who made the ultimate sacrifice

 

 

 

 

The Prime Minister, Justin Trudeau, today issued the following statement on Remembrance Day

“Every year on November 11, we come together to honour the brave women and men in uniform who uphold our values here at home and around the world. The values that unite us as Canadians – values of peace, freedom, and democracy.

“In hockey arenas, school gymnasiums, city centres, and retirement homes in every community across the country, we vow to never forget the sacrifices members of the Canadian Armed Forces and our Veterans have made for us. We wear red poppies over our hearts to remember those who have made the ultimate sacrifice – a tradition inspired by Canadian Lieutenant-Colonel and surgeon John McCrae’s poem ‘In Flanders Fields’ – and we pay tribute to their family members and loved ones.

“‘The torch; be yours to hold it high,’ wrote Dr. McCrae during the First World War. From fighting alongside our allies in the First and Second World Wars, to today providing essential emergency response support to Canadians impacted by severe weather events and training the Ukrainian military as they defend their country, generation after generation, Canadians have answered the call to serve. Our service members have worn the maple leaf with honour as they represent the best of what it means to be Canadian.

“Today, we pay tribute to Canadian service members, past and present, for all they have done to keep us safe. At the eleventh hour of the eleventh day of the eleventh month, we observe two minutes of silence for the brave women and men who gave their lives in service of a better Canada – we are forever in their debt.

“Lest we forget.”

Why We Wear Poppies On Remembrance Day

Why do we wear poppies? The reason poppies are used to remember those who have given their lives in battle is because they are the flowers which grew on the battlefields after World War One ended. This is described in the famous World War One poem In Flanders Fields.

Remembrance day recipes can do for fun

Lemon Poppy Sugar Cookies for Remembrance Day

Honour the brave soldiers who fought for us with these pretty (and tasty!) Lemon Poppy Sugar Cookies for Remembrance Day or Veteran’s Day.

Ingredients

  • ½ cup butter, at room temperature
  • ¾ cup icing sugar
  • 1 teaspoon vanilla extract
  • 1 ½ tablespoons finely grated lemon zest
  • 2 tablespoons lemon juice
  • 1 tablespoon poppy seeds
  • 2 cups flour, plus more for rolling the dough
  • ½ teaspoon salt

Decorating the Cookies

  • 4 cups icing sugar
  • 2 tablespoons lemon juice
  • Red and black food colouring
  • Poppy seeds, for sprinkling

Instructions 

  • Beat the butter, sugar, vanilla, lemon zest and juice until combined. Beat in flour, salt, and poppy seeds. Form dough into a ball, wrap in plastic wrap and refrigerate until firm, at least 2 hours
    ½ cup butter, ¾ cup icing sugar, 1 teaspoon vanilla extract, 1 ½ tablespoon finely grated lemon zest, 2 tablespoons lemon juice, 2 cups flour, ½ teaspoon salt, 1 tablespoon poppy seeds
  • Preheat oven to 350 degrees
  • Turn dough out onto a lightly floured surface and roll out to ¼-inch thickness. Cut out cookies using 2 or three different size cookie cutters. Transfer to a baking sheet and refrigerate for 30 minutes
  • Bake until the edges just start to brown, 10-12 minutes. Remove from oven and cool completely

Make frosting:

  • Mix the icing sugar and lemon juice in a medium-sized bowl. Add more lemon juice if too thick or more icing sugar if too thin. Tint a large portion red, a small portion black, and leave the remaining white
    4 cups icing sugar, 2 tablespoons lemon juice, Red and black food colouring

Decorate:

  • Trace an outline around the cookie with the red icing, following the poppy shape. Pipe a dot of icing into each of the petals and feather to cover each petal. Immediately make a circle with small dots in the middle with the white icing. Using a toothpick draw the white icing to the edges of the poppy. Once the icing is set, pipe a large white dot in the center of each cookie. Once the dot is set, pipe a black line around the dot and immediately sprinkle it with poppy seeds. Allow the frosting to set completely before storing.

Time does not include time to decorate these. This will take a while but would be fun if you can get some help from the kids in your life!

Disney Jungle Cruise Cupcakes

It was so much fun making these easy Disney Jungle Cruise cupcakes with the kiddo–they’re super straightforward and simple!

Prep Time 10 minutes
Cook Time 25 minutes
Additional Time 10 minutes
Total Time 45 minutes

Ingredients

  • 12 Vanilla Cupcakes
  • 2 C unsalted sweet cream butter, softened
  • 5 C powder sugar
  • 2 tsp vanilla
  • 8 TBSP heavy whipping cream
  • 3 C crushed Captain Crunch Cereal
  • Kelly Green, Chocolate Brown, Black gel food colouring

Instructions

  1. Preheat the oven to 350 and line a muffin pan with cupcake liners.
  2. Make the vanilla cupcake batter (use the Lazy Girl’s vanilla cupcakes or even a boxed cake mix).
  3. Divide the batter evenly between the 3 bowls. Mix in a few drops of each colour into 1 bowl each and mix until combined
  4. Scoop 1 tbsp of each colour into the cupcake liners in layers. Use a knife and swirl the colours slightly
  5. Bake in the oven for about 18-20 minutes. Remove the cupcakes and allow them to cool fully before frosting.
  6. Using a stand mixer, combine the butter, powdered sugar, vanilla, and heavy whipping cream and mix on medium speed until stiff peaks form.
  7. Scoop 1 ½ C of frosting into a medium bowl and set aside.
  8. Using the remaining frosting, divide the frosting evenly between 3 bowls and mix one of the colours into each of the bowls.
  9. Mix 2 cups of the crushed Captain Crunch cereal into the remaining bowl with the 1 1/2 cups of the white frosting we set aside.
  10. Using the ice cream scooper, scoop dollops of frosting onto the cooled cupcakes. Place the piping bag into a large glass and fold the sides over.
  11. To prepare the camouflage frosting, scoop the black frosting onto one side of the piping bag. Scoop the green frosting onto another side, and scoop the brown frosting onto the remaining side.
  12. Pipe a dollop onto the top of the cereal frosting, using your hand to swirl it slightly while lifting it up.  photo collage tutorial of how to make jungle cruise cupcakes

 This is a sweet and floral cake that is perfect for any dinner…and makes a wonderful gift.

Cook time: 45 Min  Prep time: 5 Min  Serves: 6
Ingredients

for the filling:

1 apple – peeled and cut
2 sprigs of fresh rosemary
1 tsp. sugar
zest and juice of ½ lemon
1 tsp. butter for the cake:
1 stick butter
¾ cup sugar
3 eggs
2 cups flour
1 tablespoon baking powder

Directions

1. Place all of the ingredients for the filling in a small saucepan and simmer on low for about 5 minutes. Let cool and remove the rosemary. Place cool apple in the food processor. Add the butter, sugar and eggs and process. Add the flour and baking powder and continue to process until smooth. Prepare a loaf pan and add the batter. Top with a fresh sprig of rosemary and sprinkle some sugar over the top. Preheat Oven to 350: Bake for 40 – 45 minutes or until the toothpick test comes out clean.
