We start with what is Remembrance Day
- Remembrance Day was first observed in 1919 throughout the British Commonwealth. It was originally called “Armistice Day” to commemorate armistice agreement that ended the First World War on Monday, November 11, 1918, at 11 a.m.—on the eleventh hour of the eleventh day of the eleventh month.
- From 1921 to 1930, Armistice Day was held on the Monday of the week in which November 11 fell. In 1931, Alan Neill, Member of Parliament for Comox–Alberni, introduced a bill to observe Armistice Day only on November 11. Passed by the House of Commons, the bill also changed the name to “Remembrance Day”. The first Remembrance Day was observed on November 11, 1931.
- Every year on November 11, Canadians pause in a moment of silence to honour and remember the men and women who have served, and continue to serve Canada during times of war, conflict and peace. We remember the more than 2,300,000 Canadians who have served throughout our nation’s history and the more than 118,000 who made the ultimate sacrifice.
- The poppy is the symbol of Remembrance Day. Replica poppies are sold by the Royal Canadian Legion to provide assistance to Veterans.
- Remembrance Day is a federal statutory holiday in Canada. It is also a statutory holiday in three territories (Yukon, Northwest Territories and Nunavut) and in six provinces (British Columbia, Alberta, Saskatchewan, New Brunswick, Prince Edward Island and Newfoundland and Labrador).
- The national ceremony is held at the National War Memorial in Ottawa. The Governor General of Canada presides over the ceremony. It is also attended by the Prime Minister, other government officials, representatives of Veterans’ organizations, diplomatic representatives, other dignitaries, Veterans as well as the general public.
- In advance of the ceremony, long columns of Veterans, Canadian Armed Forces members, RCMP officers, and cadets march to the memorial lead by a pipe band and a colour guard. At the end of the ceremony, they march away to officially close the ceremony.
- Some of the 54 Commonwealth member states, such as Canada, the United Kingdom and Australia, observe the tradition of Remembrance Day on the eleventh hour of the eleventh day of the eleventh month. Other nations observe a solemn day but at different dates. For example, ANZAC Day is observed in New Zealand on April 25. In South Africa, Poppy Day is marked on the Sunday that falls closest to November 11.
- Many nations that are not members of the Commonwealth also observe Remembrance Day on November 11, including France, Belgium and Poland.
- The United States used to commemorate Armistice Day on November 11.
- However, in 1954 they changed the name to Veterans Day.

“Remembrance Day is an opportunity to recognize members of the Canadian Armed Forces who have courageously answered the call of duty. When it was needed most, they left behind their families and homes. Many returned with severe trauma – or didn’t return at all. Their sacrifice is a debt that we can never repay.
“As we reflect on this debt, we are reminded that this day is not just about the past; it is about our present and our future. From the battlefields of the First and Second World Wars, to Korea and Afghanistan, and in peacekeeping operations, to the training grounds for Ukrainian soldiers, and here at home, responding to a global pandemic and to climate-related disasters, Canadian Armed Forces members continue to show unwavering resolve and bravery.
“Members of our Armed Forces have endured the horrors of war to defend our values. We owe it to them to stay true to our values and to never forget the sacrifices they have made to protect them. While we observe a moment of silence and lay wreaths at memorials across the country, we acknowledge the importance of teaching the lessons of history to the next generations. May they carry the torch of remembrance forward so that we can create a brighter world for all.

Hello everyone.
Today, we pause to remember the brave women and men who have made the ultimate sacrifice, we pay tribute to our Veterans who have served this country, and we honour all those who have answered the call to serve.
When Canadians have fought during times of war and conflict, they’ve done so in defence of the values we all hold dear –values like freedom, democracy, and the rule of law.
During the First and Second World Wars, in Korea and Afghanistan, and in peacekeeping operations – members of our Armed Forces have stood up for these values.
They have endured the horrors of war to defend them.
They have borne scars.
And too many have given their lives.
We owe it to them – to stay true to our values and to never forget the sacrifices they have made to protect us all.
But while the sacrifices of the Canadian Armed Forces are rooted in history, the tradition of their service lives on today.
Members of the Canadian Armed Forces are training the Ukrainian Forces, working with our NATO allies, and stepping up for communities when natural disasters strike.
So today, as we pause for two minutes of silence, and as we take a moment to reflect, let’s think of the sailors, soldiers, and aviators of Canada’s past, present, and future.
Their sacrifices can never go unnoticed, and that’s why we say – lest we forget.

Why We Wear Poppies On Remembrance Day
Why do we wear poppies? The reason poppies are used to remember those who have given their lives in battle is because they are the flowers which grew on the battlefields after World War One ended. This is described in the famous World War One poem In Flanders Fields.

Red Velvet Cupcakes
Ingredients
For the Royal Icing Flowers
- 2 cups confectioners sugar 240 g
- 2 tablespoons +1 ½ teaspoons meringue powder
- 2 tablespoons +1 ½ teaspoons water
- Red, yellow and green food coloring
- Waxed paper
- 3 disposable decorating bags I used Wilton 16″
- Pastry tips – #104 #352, #2.5 (you can use #3 if you can’t find)
- Flower nail
For the Cupcakes
- 1 box Red Velvet Cake Mix (prepared according to package instructions – I used Duncan Hines) 18.25 oz or 517 g
For the Buttercream Frosting
- 1 cup unsalted butter, at room temperature 226 g
- 3 ¾ cups confectioners sugar 453 g
- ¼ cup heavy whipping cream 60 ml
- 1 ½ teaspoons vanilla extract
- 1 ½ teaspoons clear vanilla extract I used Wilton
- 1 disposable decorating bag I used Wilton 16″
- #1M pastry tip
Instructions
For the Royal Icing Flowers

Place sugar, meringue powder and water in a large bowl. With an electric mixer on low speed, beat for 6 minutes. Immediately transfer to an airtight container or cover bowl with a damp cloth. This icing will dry out quickly. Before making the flowers, take out ⅔ cup of icing and place in an airtight container (for the flower centers and leaves later). Add red food coloring to the icing and mix. I used a whole jar of Wilton No-Taste Red Food Coloring. Cut 24-30 (2″x2″) squares out of waxed paper. Fill a decorating bag fitted with a #104 tip with red icing. Place a little icing on a flower nail, then place a waxed paper square. Pipe a 5 petal flower. Place on cookie sheet to dry. Repeat. You should have enough for 24 flowers. Let flowers dry for at least 8 hours or overnight.
For the Cupcakes

Make the cupcakes according to the cake mix package instructions. Let cool.
For the Buttercream

Place softened butter in a large bowl. With an electric mixer, beat on medium speed for 3 minutes. Turn mixer down to low and gradually add sugar, cream and vanilla. Turn mixer up to medium and beat for 3 more minutes.
To decorate
-
Place ½ of the buttercream in a pastry bag fitted with a #1M tip (refill bag when needed). Pipe buttercream onto cupcakes in a circular swirl pattern (like soft serve ice cream). Place a dried royal icing flower on each cupcake. Using the remaining royal icing, color half green and the other half yellow. Place the green icing in a pastry bag with a #352 tip and the yellow icing in a pastry bag with a #2.5 tip. Pipe 5 yellow dots in the center of the flowers. Pipe a green leaf on each side of the flower.

Berry Avocado Spinach Pasta Salad – the perfect summer salad for easy lunches, potlucks, barbecues & parties. Best of all, this recipe comes together quickly with healthy greens, in-season fruit, chopped nuts and crumbled cheese.
- 1 1/2 cups cooked gluten-free pasta , use any gluten-free or grain free pasta brand you like, but if you are paleo these from Jovial, or Almond Love for Keto or Cappello’s grain-free pasta. If you are looking for a chickpea or lentil based pasta, you can use Banza pasta shells that are made with chickpeas.
- 4 cups baby spinach
- 1-2 cups of green leaf or romaine lettuce chopped
- 2 tablespoons fresh basil or mint finely chopped
- 1 1/2 cups sliced strawberries
- 1/2 cup fresh blackberries
- 1/2 cup fresh blueberries
- 2 medium avocados diced
- 1/2 cup cubed watermelon
- 1/2 cup chopped pecans or walnuts
- 1 cup chopped cooked chicken grilled or rotisserie (leave out for meatless version)
- 1/2 tablespoon feta crumbled optional for serving

- 1/3 cup extra virgin olive oil
- 3 tablespoons apple cider vinegar
- 1/4 cup dairy-free plain Greek style yogurt , we like Kitehill or Culina.
- 1 tablespoon Dijon mustard
- 1 1/2 tablespoons honey
- 2 tablespoons fresh lemon juice
- 1 1/2 teaspoons poppy seeds
- salt and black pepper to taste

Combine pasta, spinach, lettuce and basil in a large mixing bowl.

In a small bowl, whisk together all the ingredients for the vinaigrette.

Pour 2/3 of the dressing over the salad and toss to combine. Add the strawberries, blackberries, blueberries, avocado and cooked chicken (if using) and drizzle with the remainder of the dressing.

Serve immediately with chopped pecans and crumbled feta, if desired.
